So fresh and so clean! Tart cherries, fresh raspberries, eucalyptus and cedar, thyme, sweet cinnamon and dried oranges. Add in some cacao and star anise and we’ve got a party.
Pair with a beet and goat cheese salad, paella, or a chicken club sandwich, maybe even a vegan BLT.

Vineyard notes
The 2025 growing season started very dry, with late rain mid-February that gave the vines and cover crop a boost of growth. Spring was windy, followed by an unusually cool summer. The grapes benefitted from this by slowly accumulating sugar and retaining a high amount of acid. The heat finally arrived at the end of August, just in time to give some more ripeness before picking, and the fruit was excellent.

Production notes
The Graciano is the one wine we always ferment carbonic. After hand harvesting in the early morning, the whole clusters were loaded into a few separate tanks, which were then sealed up and kept saturated with CO2. The grapes fermented until we pressed after 17-20 days. The wine finished ferment in tank and was then racked to neutral barrels for maturation until the spring. It is always bottled without any fining and filtration, and just a minimal amount of sulfur.
