Ch CH Ch Ch Ch Ch Ch CHERRY BOMB!!!! What a fun wine to make (and drink)! The aromas and flavors of this wine are like biting into a crunchy berry with bright red fruit, cherry cola, raspberry jam, clove and violets. This feels like a nod to carbonic as opposed to fully carbonic, and it definitely throws a punch. CARBONIC??? I THOUGHT YOU’D NEVER ASK?!?! Carbonic maceration is a style of winemaking where the fermentation starts inside of each and every little berry and is started with enzymes rather than yeast. We put whole clusters into a deep, dark, stainless steel tank with dry ice, close it up and leave it untouched. The result is a lively, slightly spritzy yuminess that is hoping to be invited to the party straight-away.

Vineyard notes

Funny story about Graciano...we, like many other vineyards in California, thought we planted Mourvedre. However, because of a miscommunication Graciano was imported from Spain and planted over hundreds of acres. It was a happy accident in our case, because it turns out we love making this wine and it works beautifully in our little corner of the world.

Production notes

We hand-picked these grapes very cold, very early, sent them whole cluster into a stainless tank. We blew her a kiss, closed her up, and let her do her thang for 21 days without any parental supervision. Then BANG! Magic fairy juice...pressed, and finished in neutral oak barrels, and bottled without fining or filtration.
