2018 Sauvignon Blanc

These vines were planted with the help of Willow's little hands. This beauty was fermented in Edgar - the cement egg - using only native yeast. This wine is the result of many years of experimentation, and where we've landed is in a field of pears, grapefruit, and key lime pie.

Vineyard notes

This wine comes mostly from our new planting of Clone 1 Sauvignon Blanc in our Right-Left Vineyard. The unique soils on this part of the property help showcase the variety's bright acidity and freshness, and lend a distinct minerality to the finished wine.

Production notes

The fruit was whole-cluster pressed and the juice was cold-settled overnight before being racked into a mixture of concrete and stainless steel vessels. The juice was naturally fermented by native yeast over a period of 6 weeks at cool temperatures. The wine was aged sur lie for 120 days, before being blended and bottled.
