
2023 Cabernet Sauvignon
Earthy and green, luscious juicy plums, dried thyme, currants, orange liqueur and cement—this is an old-school Cab. There’s a kiss of oak, great acid and elegant tannins, an umami finish with a burst of fruit at the end.
Please roast me a succulent chicken with rosemary and butter and bake me some fresh sourdough and pour me a glass or two.
Is this too much to ask?

Vineyard notes
The long, cool growing season was a welcome change for the Cab Sauv from the past few vintages. Budbreak was later than average and fruit set happened over several weeks. This led to some uneven ripening, which we adjusted for with a green drop when about 90% of the fruit was through veraison. Cab is typically the last fruit to ripen, and we weren't sure if we'd get it fully ripe because of the very cool weather; however, the bit of heat in early October pushed the abundant crop to the finish line.

Production notes
The Cabernet comes from three different blocks, each their own clone. They are harvested and fermented separately to capture their unique personalities and add complexity to the final blend. Block 7, See clone, is the first to arrive at the winery and is fermented in an oak foudre. Block 6, clone 4, arrives next and goes into a stainless steel open top tank. Block 3, our oldest block, arrives last and goes into specially designed wooden rotary fermenters that are manually spun several times a day. Once dry, the wine was pressed into some neutral and some new French oak, where it aged for 20 months before being bottled in July of 2025.
