The wine that took its time. This wine finished its slow, steady ferment near Christmas time. Hand-picked in early August,  a week earlier than we had ever picked before. Honeydew melon, lemon, ocean brine, green apple dipped in honey, grapefruit pith, and a distinct rocky minerality. As the wine sits in the glass, beautiful hints of jasmine emerge which counterbalance the acid perfectly.

Food Pairing

Pair this with oysters obviously, or lox and bagels, a shaved fennel and grapefruit salad, or whitefish with lemon and capers.

Vineyard Notes

The start to 2020 was cool and late. The abundant sunlight and moderate temperatures made for an ideal summer. The small crop raced through veraison in early August. We picked prior to a heat wave to make sure we preserved the mouthwatering acidity.

Production Notes

Hand harvested. Whole cluster pressed.  Native yeast.

The fruit was gently pressed into a stainless tank where it cold settled overnight, without the addition of fining agents. We racked the wine into two cement eggs, stainless steel barrels, and neutral wood barrels. The juice fermented cool and slow over several months. It was racked and blended the following January.

This wine is a lightweight boxer in its prime. It has energy and texture. It surprises you and dances around your palette, with a tiny bit of tannin from the skin contact. This beautiful Sémillon is layered with bright acid, herbal notes like thyme and tarragon, truffle honey, caramel, citrus, candied lemon peel, and orange blossom.

Pair with uni custard, because the world is ending.

Vineyard Notes

This one acre block of Clone 2 is starting to mature nicely and show its personality. The fruit was harvested a few weeks later than in previous years, as the vintage was cooler and wetter than average. 

Production Notes

The block was hand harvested and separated into two lots. The first was destemmed and fermented on the skins in open top puncheons. The second lot was pressed directly and fermented in French oak and stainless steel. After 15 and 30 days respectively, the skin contact lot was pressed and aged in mostly neutral French oak. The wine was then blended and bottled in spring of 2020.

The melody is Merlot, with harmonies from Cabernet Sauvignon, Cab Franc, and a bit of Syrah. Notes of plum, smoke, cola, Chinese 5-spice, orange, cedar, mushroom, and earth. Complex, balanced, with fine tannins.  This is a very food-friendly wine, pairable with almost anything depending on your mood.

Pair with grilled or blackened meat or fish, baba ganoush, braciole (look it up, Alison loves it). 

Vineyard Notes

This blend is an expression of several parts of our organically farmed vineyard, coming together in a way that makes the whole greater than the sum of its parts.

Production Notes

Each component for this blend was vinified individually, using a variety of techniques. The Merlot was destemmed and fermented in an open top tank, and Cab Sauv in a 600L rotary barrel and open top tank. The Cab Franc was placed in a cement tank, and the Syrah was fermented 100% whole cluster. All ferments were carried out by native yeast, and after pressing the wines were aged in French oak before being blended and bottled in the summer of 2020.
